Nuts are considered the ideal snack.
Nuts are consumed by the majority of people for their crunchiness, healthy fats, good protein and convenience.
Nuts in the natural form can be the cause for mineral deficiencies because of the enzymes inhibitors, phytic acid, polyphenols (tannins) and goitrogens found in nuts.
Nuts contain enzymes inhibitors that will clog or denatured an active site of an enzyme (digestive enzymes that can help to break down food and metabolic enzymes that help every biological process of the body). Soaking the nuts in water neutralizes enzymes inhibitors and increases the amount the amount of B vitamins.
Phytic acid found in the natural form of nuts is binding to minerals (zinc, iron, calcium, magnesium, etc) in the gastric intestinal tract and the minerals cannot be absorbed in the intestine.
During the soaking process the phytic acid is destroyed and minerals can be absorbed properly in the gastric intestinal tract.
To summarize the soaking process is necessary for:
- removing or reducing the phytic acid
- removing or reducing tannins
- neutralizing the enzymes inhibitors
- increasing the amount of vitamins, especially B vitamins
- braking down gluten and making digestion easier
- making the proteins more readily available for absorption
- preventing mineral deficiencies and bone loss
- neutralizing toxins in the colon and keeping the colon clean
The soaking process starts first of all with washing the nuts and putting them in a bowl covered with water, the volume of water needs to be double compared with the nuts .
Soak the nuts in water for 3-12 hours.
The period of time for soaking depends on the nuts; the harder the nuts, the longer the soaking process.
The soaking process:
- almonds 8-12 hours.
- brazilian nut 2 hours
- cashew 2-3 hours,
- flax seeds 6-8 hours,
- macadamia 2 hours
- pecan 4-6 hours
- pine nut do not soak
- pistachio 2 hours
- Pumpkin seeds 6-8 hours,
- sunflower seeds 2-4 hours,
- sesame seeds 3-4 hours,
- walnuts 6-8 hours,
After the soaking process is complete, the water is drained, the nuts are rinsed and put in a colander for another day until you see the nuts sprouting.
The sprouting process:
- Almonds 12 hours sprouting
- Pumpkin seeds 1-2 days sprouting
- Sesame seeds 1-2 days sprouting
- Sunflower seeds 2-3 days sprouting
Do not sprout:
- Brazilian nut
- Flax seeds
- Pine nut

If you are planning to keep the nuts for a longer period of time, dehydrate the nuts in a dehydrator up to 115 degree Fahrenheit or 46 degree Celsius. The nuts become crunchy and have a wonderful texture. Almonds and walnuts have the most appealing taste after they are soaked and dehydrated.
